Okay so I experimented this week with making a Real Food version of the classic Tater Tot Casserole and I have to pat myself on the back just a bit as the outcome was really fantastic. Not that I am this amazing cook. I just happen to love it when I create something with vegetables and my children not only devour it but then ask for seconds. Its as though the Heavens have opened up and the angels begin singing the Hallelujah chorus - Can I get an AMEN?!

A REAL FOOD Tater Tot Casserole Recipe
Ingredients:
4 Tbs. Olive Oil
6 Medium Potatoes, Diced
1 lb. Ground Beef, Cooked and Drained
1 Cup Chopped Kale
1 Cup Chopped Mushrooms
1 Tsp. Minced Garlic
2/3 Cup Homemade "Cream Of" Soup Mix
2 Cups Water
1/4 Cup Heavy Cream
1 Tsp. Salt
1/2 Tsp. Pepper
Directions:
1.) Heat 3 Tbs. olive oil in large pan on medium/ high heat and add diced potatoes. Fry potatoes until they are cooked through, browned, and crispy. (If you would prefer to bake these, drizzle the olive oil over diced potatoes in a bowl, and mix thoroughly. Bake potatoes at 450 degrees for about 17-20 minutes)
2.) Saute kale, mushrooms, and mixed garlic in 1 Tbs. of olive oil for about 5 minutes stirring frequently.
3.) Heat water in sauce pan to a boil. Turn burner off and add 2/3 Cup Homemade Cream Of Soup Mix. Whisk until smooth and thickened.
4.) In a large bowl, combine ground beef, sauteed vegetables, Homemade Cream Of Soup, heavy cream, salt, and pepper. Mix thoroughly.
5.) Add mixture to a 9x13 casserole dish. Sprinkle salt and pepper on top to taste if you like. Bake uncovered in preheated oven at 400 degrees for 30-35 minutes.
6.) ENJOY!

ReplyDeleteI have frozen other tater tot casserole recipes, but not this one, I always felt they were the perfect freezer casserole. I think this one would work just as well. Congrats again!

DeleteMmmmm, I saw tater tot casserole on 19 Kids and Counting once & thought it looked tasty, but not super healthy. I'll definitely try out this healthier version! I might try to substitute lentils for the ground beef though, to make it vegetarian. Thanks for sharing!!
